I don't think you can just change the color. It changes to reflect your driving style.

From the Civic owner's manual:
Ambient Meter
● Changes color to reflect your driving
style.
Green: Fuel efficient driving
White green: Moderate acceleration/
deceleration
White: Aggressive acceleration/
deceleration​
● The ambient meter color changes in
accordance with your brake or
accelerator pedal operation.

That would involve removing the gauge cluster and attempting to take it apart to see if any LEDs in the back are replaceable

Exactly. It's a lot of work and often not worth it. You're talking hours of work here and the risk of breaking something. I don't know about you guys but i'm quite content with the cluster. Rather wait for a factory update.

Don't. Cluster work, in terms of labour, for a couple bulbs - most unefficient use of money for modding.

And if you're DIY, be prepared to break apart your new car.

However, there are companies out there that specialize in clusters and overall with modifying interiors and dealing with electrical components, so someone really in need of this can find those qualified.

I only see this approach with some high dollar build, but that kind of person wouldn't even be posting about the HOW part.
